The Olive groves
Our olive groves are all located in the municipality of Montecchio, a town that has always been synonymous with high-quality extra virgin olive oil. Here, the olive tree is not just a crop, but an integral part of the landscape, culture, and collective memory.
Nature itself has made this place special.
Western exposure, stony soil, and a constantly breezy climate have always been the three elements that define Montecchio’s agricultural identity. These conditions work silently, day after day, creating an ideal balance.
Added to all this is a unique microclimate, enhanced by the perfect altitude of approximately 500 meters above sea level: an environment that favors the harmonious development of the trees, the health of the olives, and the concentration of aromas and fragrances.
This is where the excellence of our extra virgin olive oils comes from. An excellence that is the fruit of the encounter between a generous land, an ideal climate, and the patient work of man, who for generations has preserved and interpreted this extraordinary heritage.
ANCIENT OLIVE GROVES
The oldest olive groves tell the story of our roots.
They are between 60 and 80 years old and were planted by generations before us, when every tree was a promise, an act of faith in time.
These olive groves are deeply rooted in the land, where historic varieties intertwine and blend, creating a unique hilly landscape with a powerful identity.
Moraiolo, Frantoio, and Leccino are the cultivars par excellence: trees that are one with these places, grown following the rhythm of the seasons and the patient work of man. The large and regular planting pattern (approximately 6×5) reflects an agricultural vision of times gone by, when space and time had a different value.
Here, harvesting can only be partially mechanized. In the steepest areas and among the largest trees, it is still the hand of man that makes the difference: an ancient gesture, repeated year after year, requiring attention, respect, and profound knowledge.
Beautiful, strong, and self-confident trees that have stood the test of time and today not only produce olives, but also shape the landscape, making it unique.
RECENT OLIVE GROVES
An important part of our history is rooted in our youngest olive groves, those born from the desire to look forward without forgetting our roots.
Our Olive Grove of the Heart is the Il Pero Olive Grove, established in Casaccetta in 2012. It is here that we decided to test our ideas, intuitions, and desire to innovate. Here, the olive grove is not just production, but also planning, vision, and the future.
A beautiful, new, and lush olive grove, designed with orderly rows that reflect a specific choice: to work better, with respect, paving the way for more modern agronomic management.
Even the choice of varieties stems from this balance between tradition and courage.
There is the Moraiolo, solid and distinctive, which reminds us of where we come from.
There is the Nocellara del Belice, introduced with a hint of boldness, to broaden horizons and aromas.
And then the Leccio del Corno, elegant and consistent, capable of providing character and continuity.
From this olive grove, our three monocultivar olives are born: three different interpretations of the same terroir, three voices that express a single passion.
An experience designed for those who love extra virgin olive oil and want to truly discover it, variety by variety, emotion by emotion.

THE RIGHT TIME FOR HARVESTING
Everything else takes shape from a good start.
Even a small mistake in picking time would compromise the characteristics and properties of our oil.
That’s why we wait until the olives reach perfect ripeness, the one that guarantees balance, aroma, and quality.
The best harvest time is from early October to mid-November, varying depending on the variety and weather conditions. We begin field checks very early, observing the fruit day after day to ensure we start at exactly the right time.
Because a great oil always comes from careful selection right from the start.



Harvest techniques:
Manual tradition and mechanical
innovation
In olive groves where it is possible, harvesting is carried out using mechanical shakers, which transmit a controlled vibration to the trunk, causing the olives to fall into a special inverted umbrella. This technique reduces harvesting time, limits contact with the soil, and preserves the quality of the fruit. In more delicate orchards, where the shape of the trees or the slope of the land preclude the use of mechanical equipment, harvesting is carried out entirely by hand, using electric shakers and nets spread on the ground. This method ensures a targeted and respectful harvest, particularly suitable for historic orchards or those with difficult access.
