Black olive paste

Description

This cream, made from green or black olives, captures all the intense and delicious fragrance of the fruit, and is perfect on all kinds of tartlets and vol au vents. It is perfect with boiled meats and can be a fantastic addition to pasta or rice dishes. Try two teaspoons of the paste as a pasta sauce, mixed with olive oil and parmesan cheese and heated in a pan with a clove of garlic.
